I had some leftover White chocolate and Cranberry and white chocolate cookies and was wondering what to do with them. I had some apples and thought, lets make them into a crumble topping. I am so happy with how this recipe turned out and it went down well at home. You can still pair the crumble with ice-cream or custard. A simple recipe, minimal ingredients and super tasty.

Serves 2 to 6
Golden Delicious Apple - 2
Granny Smith Apple - 4
Cold Water - 1/2 tbsp
Cinnamon - 1 tsp
Nutmeg - 1 Pinch
Ginger Powder - 1 Pinch
Lemon Rind - 1/4 of lemon
Plain Flour - 1 & 1/2 cups
Light Brown Sugar - 1/2 Cup & 1tbsp
Large Cookies - 3
Unsalted Butter - 1/2 Block
Method
Apples
Peel the skin, slice into quarters, remove the core and cube the apples.
Add to the apples to a large saucepan.
Now add your water, cinnamon, nutmeg, ginger and lemon rind to the apples, give a quick stir, add 1tbsp of the light brown sugar and then mix again.
Now add to the hob on a medium temperature until they soften a little, roughly about 5 mins. Make sure to stir every minute.
Crumble Topping
Add your cookies to the food processor (you can use a blender or crush in a sealed bag, using a rolling pin to break up the cookies). Blend until you have small crumbs.
Now add 1 cup of the plain flour and 1/2 cup of the light brown sugar to the crumbs. Blend this mix until you have a fine consistency.
Now melt the butter and then add to the fine mix. Blend! You should have a dough-ish like mix.
Add to your doughy mix, 1/2 cup of flour and mix in with a spoon.
Final Steps
Add your apples to a medium sized oven proof dish.
Lay your crumble on top, spread evenly.
Place in a pre-heated oven at 200°C and bake until the top is golden. My oven takes about 30 mins. The main aim is for the topping to be baked as the apples are already partially cooked.
Don't eat them all in one go!
Top Tips
You can make your crumble whilst the apples cook or move the cooked apples to the side before proceeding with the crumble.
Serve with Custard or Ice-cream.
