Cinnamon swirls are a favourite pastry of mine, memories flow of my mum picking me up a double box of them from the shop, naughty breakfast treats. If you're a cinnamon fan, then this is a recipe for you.
Prepare time: 10 - 15 minutes / Servings: 12 pastries
Shopping List
Serves 1 to 12
Unsalted Butter - 50g
Light Brown Sugar - 50g
Dark Brown Sugar - 1/2 tbsp
Cinnamon - 1/2 tbsp
Ready Roll Puff Pastry - 1 Pack
Biscoff Spread - Approx 2 tbsp (melted)
Fudge Pieces - Approx 1 to 2 tbsp
Method
Cinnamon Paste
Partially melt the butter, 10 to 15 seconds in the microwave
Add to the butter the light brown sugar, dark brown sugar and the cinnamon
Mix the ingredients into a paste, it should be thick but easily spreadable. Once mixed, I leave on the side to keep at room temperature.
Making the swirls
Pre-heat the oven to 180°C
Unwrap the ready roll puff pastry. Keeping it on the baking paper it comes with, carefully unroll the pastry onto a flat surface.
Take a rolling pin and gently roll the pastry, I find this helps smooth out any possible cracks and bumps from where the pastry has been rolled up.
Time to spread the cinnamon paste over the pastry. Spread evenly all over, right up to the edges.
Now start to roll the pastry, from the shortest side of the pastry, keeping a gentle touch and slightly pressing down to make sure the pastry seals. When you get to the last roll, make sure the end is sealed, so it stays rolls up.
Cut into 12 even slices.
Take each slice and add to a baking mat or baking sheet lined oven tray. I also squidged a few of them in a teeny bit just to make sure they rounded up in the oven.
Place the swirls in the oven for 20 minutes, they should turn a lovely golden colour.
Once removed from the oven, allow to cool for 5 to 10 minutes.
Melt the Biscoff spread, in the microwave for approx 20 seconds or on the hob.
Drizzle the Biscoff over the pastries and then top with the fudge pieces.
Don't eat them all in one go!
You could even crumble some Biscoff biscuits over the top in addition to or as a replacement for the fudge
To make larger swirls, roll up from the longest side instead.
