You can't tell that this potato salad is dairy free, which is the dream for the lactose intolerant and those that don't eat dairy. Enjoy this beautiful side dish as a lunch, party or BBQ side-dish. Of course, you can make a dairy version by using dairy mayonnaise, instead of dairy free.

New/Salad Potatoes - 1/2 bag (approx 50g)
Non-Dairy Mayonnaise - 1/2 cup
Apple Cider Vinegar - 1/2 tbsp
Colmans Mustard - 1/2 tbsp
Paprika - 2 pinches
Black Pepper - 1 pinch
Red onions - 1/2 cup
Fresh Parsley - 1/4 cup
Scallions - 1/4 cup
Method
Preparing the potatoes
First boil the kettle; whilst the kettle boils, prepare the potatoes
Wash the potatoes and cut them in half
Take the boiled water and place into a medium sized saucepan, add to the hob on a high heat and the pop in your halved potatoes. Leave the potatoes to boil.
Once boiled (for 8-10 minutes), drain the potatoes. I like to then give them a flash of cool water over the top, drain and then leave to fully cool before adding them to the dressing.
The dressing
In a bowl add the mayonnaise, apple cider vinegar, mustard, paprika, black pepper, diced red onions, finely chopped parsley, diced scallions.
Mix the ingredients together
Final steps
Add the cooled potatoes to the dressing mix. Make sure the potatoes are mixed in well and covered with the dressing.
Cover and refrigerate the potato salad until you're ready to serve.

You can add a couple of crushed garlic cloves if you wish
How do I tell if the potatoes are ready? I take a sharp knife and lightly pop into one of the potatoes, if it starts to slide of the knife, the potato is ready.
