Falafel are great as a snack or made into a larger meal, in this case I ate them inside flatbread wraps. Easy to make, full of flavour, filling and full of nutrients.

Serves 1 - 4 / 16 balls
Chickpeas - 1 Tin
Coriander (fresh)- 1/3 Cup
Parsley (fresh) - 1 Cup
Red Onion - 1 small
Salt - 1/2 tsp
Green Chilli - 1
Cayenne Pepper - 1 tsp
Garlic Cloves - 2 large
Paprika - 1 tsp
Warm Water - 1/2 Cup & 29.5ml
Baking Powder - 1/2 tsp
Caribbean Curry Powder - 1/2 tsp
Black Sesame Seeds - 1 tsp
Plain Flour - 1/4 Cup
To serve...
Flatbread, Hummus, Leafy Salad, Falafel, Black Tahini
Method
Prep 2 hours, 20 minutes (chickpeas to soak) | Cook 20 minutes
Prepare the Chickpeas
Empty into a colander.
Run under cold water. I also like to remove any loose chickpea skins, by rubbing them gently with my fingers).
Add the chickpeas to a bowl and cover with fresh cold water. Soak for 2 hours.
Once soaked, remove from water and pat the peas dry.
Falafel Mix
To the food processor add the chickpeas, coriander, parsley, Red onion, salt, green chilli, Cayenne pepper, garlic cloves, paprika, baking powder, Caribbean curry powder, black sesame seeds, plain flour.
Now blend together.
Refrigerate the mix for 30 minutes minimum, so it firms up a little.
Time to cook
Form the falafel into balls, I use a tablespoon measurer to scoop out the mix. Roughly makes about 16 balls.
Add oil to your frying pan, enough to shallow fry. I use rapeseed as it's not overpowering in flavour and it has a high smoke point so fries well.
Once the oil is hot (I have it on heat level 7 out of 9), add the falafel balls.
I cooked for about 4 minutes on each side, or until they are golden all over.
Serve
Warm up the flatbreads first, I did this for a couple of minutes in the air-fryer. You can do this under a grill, toaster, oven etc.
Add your hummus on top.
Pop some salad on.
Now for your falafel, I cut 3 in half and then popped on top

Roll it up and you are ready to eat!

Tips
Lemon and coriander hummus is also delicious with this dish!
A squeeze of lemon juice on the salad goes well with the falafel and tahini.
You can use normal tahini but the black tahini has a beautiful smokiness to it.
