These brownies are very addictive and very tasty, the bigger the batch the better. This is a very simple recipe and it's child friendly too! I can't get enough of the mix of gooey and cakey at the same time, I really do love this recipe. You can pair them with ice-cream, custard or even a toffee or chocolate sauce drizzled over. The perfect treat, fun to make and tasty. You can also leave them in the oven longer, if you prefer the brownie to be more cakey.

Unsalted Butter - 128 g / 4 oz
Light Brown Soft Sugar - 1/2 cup
Caster Sugar - 1/2 cup
Madagascan Vanilla Extract - 1 tsp
Plain Flour - 2 cups
Eggs - 2 medium
Unsweetened Cocoa Powder - 1/2 cup
Chocolate Chips - 1/4 cup
Sunflower Oil - 1 tbsp
Snickers - 1 normal size or 2 snack size
Fine Sea Salt - A pinch
Method
Pre-heat the oven to 180°C.
First, melt half of the butter, 64g. This should take about 30 seconds or less in the microwave.
Add the light brown sugar, caster sugar and vanilla essence to the melted butter.
Mix the ingredients well. Using a whisk is best, you don't want a lumpy mixture.
Once mixed add another 64g of melted butter.
Give another whisk.
Next add the flour, mixing until it reaches a play dough texture.
Now for the eggs, they should whisk nicely to turn the flour into a smooth mixture.
Add the cocoa powder and fold in.
In go the chocolate chips and fold the mix again.
The oil can now go into the mix. This does need to be mixed in well and evenly throughout.
Cut the snickers bar/s into small pieces and then add them to the chocolatey fudge mixture.
The salt crystals can now go in and be mixed too.
You are now ready to pop the mixture into a lined (baking paper) ovenproof dish. Make sure you distribute the mixture evenly in the dish.
The brownie mix can now be placed into your pre-heated oven for 30 minutes. You may leave in the oven longer if you prefer the mix to be more cakey instead of gooey and fudgey.
Enjoy eating and try not to eat them all straight away.
You can replace the snickers for your preferred chocolate bar. I prefer to use snickers as they are a favourite of mine and they caramelise beautifully.
The salt adds a balance to the sweet and the caramel. You can remove if you prefer not to add salt to your cooking/baking.
Store in a sealed container/lunchbox
Great the next day with some ice cream or custard. You can heat the brownies for 15 to 20 seconds in the microwave to warm up.
