The Green Goddess is so delicious, it has notes of citrus and garlic which aren’t overpowering. The Greek yoghurt makes this a very light dressing and it matches well with Mediterranean dishes.
Shopping List
Serving size depends on if you drizzle or pour.
Parsley (fresh) - 1/4 Cup
Chives (fresh) - 1/4 Cup
Garlic Cloves - 2 large
Capers - 1 tsp
Dijon Mustard - 1 tsp
Rock Salt - 1 pinch
Lemon Juice - 1/2 small lemon
Greek Yoghurt - 80ml
Method
Total time: 10 minutes
Dressing
Add all of the ingredients to a blender, I used my ninja smoothie attachment on max blend.
Serve
This dressing is delicious drizzled over chorizo, tomato based dishes, falafel, salad and much more. It lends itself to Mediterranean flavours.
Tips
Refrigerate for a maximum of a few days. The lemon will cause the yoghurt to curdle/separate
Double up on ingredients for a larger serving.
