Juicy Rum Soaked BBQ'd Pineapples

The easiest and tastiest dessert for your summer BBq's. Finish this dish off with a couple of scoops of ice cream and the leftover rum and juice mixed, heated and poured over the top.



Prepare time: 5 - 10 minutes / Servings: up to 12

 

Shopping List

Serves up to 12


Pineapple Rings - 12 ( 1 fresh pineapple or 2 tins)

Dark Brown Sugar - Approx 2 tbsp (enough to sprinkle over)

Vanilla Essence - 1 tsp

Spiced Rum light or dark- Approx 1/2 cup

Pineapple Juice - 1/2 tine or approx 1 cup


 

Method


Preparing The Pineapples

  • Place your pineapple rings in either a flat dish or sealable freezer bag

  • Next sprinkle over the brown sugar

  • Mix together the pineapple juice, vanilla essence and spiced rum

  • Pour the liquid mixture over the pineapples.

  • Now cover with cling film or seal the bag and place in the fridge for a few hours or overnight until you're ready to use.


BBQ'ing The Pineapples

  • Fire up your BBQ and remove the pineapples from the juice

  • You can place your pineapple directly on the BBQ, use an olive oil or coconut oil spray on the grill if you wish. After a couple of minutes on one side, turn over to the other.

  • You will end up with gorgeous rum and caramel flavoured pineapple pieces.


Added extra's

  • Take the leftover juice mix and add to a saucepan

  • You can heat up the mixture on the hob or put the pan on the BBQ to heat up (keep the handle away from the heat)

  • Youo can now pour this beautiful rum mix over ice cream, add to custard or allow the liquid to cool slightly. If you plan to drink, wait for it to cool slightly; its up to you whether you down it in one or sip.

Top Tips

  • Add cinnamon on top of the pineapples for an extra little flavour explosion

  • Serve with Custard or Ice-cream.
