Plantain Cups

A recipe that requires minimal ingredients, minimum effort and maximum enjoyment. Great for scooping up your favourite dish, a Caribbean curry or maybe a chilli.



 

Shopping List

Serves 1 - 12


Plantain (ripe) - 2

Crystal Salt - 1 pinch

Smoked Paprika - 1 pinch

Olive Oil - 1tbsp for greasing

Method

Prep 10 mins | Cook 20 minutes



Prep

  • Peel the plantain

  • Slice the plantain into smaller pieces to make easier for mashing

  • Add the sliced plantain to a bowl and mash using a masher or fork

  • Once mashed, add the salt and smoked paprika. Mix in well.


Baking the plantain

  • Take a cupcake tin and brush a little oil in each section.

  • Take a tablespoon of the mashed plantain and add to each case.

  • Use a spoon to press the plantain up against the sides and bottom of each case, forming a cup.

  • Once your cups have been made, pop them into the oven for 20 mins, or until crispy, at 190°C.


You are now ready to fill the cups with whatever you wish!


 

Tips

  • Use Frylite for greasing if you wish.

  • Double up on ingredients for a larger serving.
