This is a simple and quick fish pie, I wasn't a mash fan as a kid, so sliced potatoes were the go to. The sweet potatoes compliment the flavour of the smoked haddock and the texture is just right!

Serves 2-3
Sweet Potatoes - 2 Medium
Olive Oil - 1/2 tbsp
Paprika - 1/2 tsp
Fish for fish pie (Buy prepared for ease)
Lemon - 1
Parsley Sauce (I cheated and bought ready-made)
Black pepper - 1/2 tsp
Garlic Powder - A pinch (1/2 tsp)
Cheese - 1 cup grated (I like to use an extra mature cheddar)
Mixed Herbs - A pinch (1/2 tsp)
Method
Prepare your ingredients, peel and then slice the potatoes, roughly 0.5cm. Grate the cheese. Rinse the fish in cold water and then cover in freshly squeezed lemon juice.
Pop the potatoes into a bowl and drizzle over the olive oil followed by the paprika. Once both are on top, mix well, making sure the potatoes are covered.
Next you will need an oven proof dish. In the dish place your fish pieces.
Once the fish has been placed, pour over the parsley sauce, followed by the black pepper sprinkled all over and then mix it all together.
Now you may place the potatoes over the top, slightly layering them as you go (watch the video for tips).
Evenly sprinkle the garlic powder over the potatoes.
On goes the cheese, make sure it's evenly placed on top of the potatoes. Mixed herbs can now be distributed over the cheese.
Place the pie in the oven, 200°C for 35 to 40 minutes, or until the potato has softened.
You are now ready to eat!
