I created these meatballs using the leftover mince mixture from my turkey gyoza dumplings recipe. Simple and delicious served with a traditional spaghetti but also great with rice or in a sub!
Shopping List
Serves 1 - 4 / approx 12 balls
Turkey Mince Mix - Approx half of the mince from the dumpling recipe
Olive Oil - 8 tsp (roughly)
Red Onions - 1/2 cup
Garlic - 2 Cloves
Sun Dried Tomatoes - 1 tbsp
Tomato Puree - 2 tbsp
Red Wine - 1 tbsp
Chicken Seasoning - 1 tsp
Thyme - 1 tsp
Chicken Stock - 1/2 Cup (I used an oxo cube)
Cornflour - 1 cup
Chestnut Mushrooms - 1/2 cup
Chopped tinned tomatoes - 1 can
Side of choice - Spaghetti / rice / baguette
Method
Prep 15 minutes | Cook 25 minutes
Ingredient Preparations
Finely dice the onions, garlic, sundried tomatoes
Now take your mince mix and roll it into a ball. I then cut the ball into roughly 12 equal parts
You can now take each part of meat and roll into balls, they will be about 1.5 inches in diameter, you can make them to your preferred size preference though.
Once rolled into balls, I pop them in the fridge whilst I make the sauce.
Tomato Sauce base
Add a drizzle of Olive Oil to a frying pan, once hot, add the onions, garlic and sundried tomatoes. Fry until they start to soften.
Now add your tomato purée and red wine, stir well.
Time to add the chicken seasoning, thyme and chicken stock. Mix in well.
Pop on top the sliced mushrooms and tinned chopped tomatoes, stir.
You now have a lovely tomato sauce base, leave this to simmer on the lowest heat.
Cooking the meatballs
Add to a frying pan, enough of the oil cover the base. Heat up on a medium-high heat (I used 6 out of 9 on my induction hob).
In a bowl, add your cornflour.
Taking one meatball at a time, roll around in the cornflour, making sure they are covered all over.
Add the meatballs, carefully, to the hot oil.
Fry on each side until browned, check they are cooked through.
Final Steps
Once the meatballs are cooked, add them to the tomato base. Cover the pan over with a lid or foil and allow to simmer on a low heat. This is a great time to cook your pasta.
Once your pasta is ready, it's time to serve up.
Garnish with parsley or spinach! Why not serve with some garlic bread too!
Tips
Make the meatballs to a size to suit you, remember the smaller they are the less time they need to cook and the same for larger, more time will be needed.
Double up on ingredients for a larger serving.
